Busy Mom Meal Plan: Venison Chili and More

Weekly Meal Plan

On Sundays, I usually try to keep the schedule clear, so I can catch up on the to-do list before starting another week. Many of my friends love hearing what I’m making, and I love sharing ideas.

This week’s plan  includes one new recipe and several old favorites. I try not to make more than one new recipe each week because I never know how the new ones will turn out.

Sunday: Grilled Cheese and Tomato Soup

Progresso Soup is “buy 2, get 3 free” at Harris Teeter through Tuesday (January 14), and I picked up a really nice half-price Italian bread loaf. Grilled Cheese, baby!

Monday: Venison Chili with Crusty Bread or Corn Bread

I absolutely love this chili! This was my new recipe this week, and it turned out great. This chili does not have the typical tomato base, and uses beef broth as the liquid.  The addition of red wine vinegar and lots of garlic add flavor to the venison, and it retains its game flavor. If you like your venison less gamey, you may want to put it in a traditional tomato based chili.

Tuesday: Spinach Quiche

My quiche recipe is pretty standard, just Google and you should find a good one. I’ll get around to blogging it soon.

Wednesday: Baked Rigatoni

Just throw cooked rigatoni, meat, spaghetti sauce, and ricotta cheese in a baking dish, top with Mozzarella and bake until the cheese is melted and bubbly. Simple! It’s also great for freezing, or giving to a needy friend.

Thursday: EarthFare Kids Eat Free

Don’t make dinner on Thursdays. Just don’t. Take the kids to EarthFare, where they eat for free with an adult purchase of $5 or more.

Friday: Leftover Cleanup!
