Yes, folks, they’re doing it again! Starting Wednesday (4/29), Harris Teeter will be honoring triple coupons for an entire week! Clean out those coupon holders and I’ll race you to the deals! Remember that you can only triple 20 coupons per day, and after that, they will be face value!
Also, if you can make it there through Tuesday night, the Frozen Boneless Chicken Breasts and the EZ Peel Shrimp are “buy 1 get 2 free.” The Apple Juice is “buy 2 get 3 free.” Oh, yeah! I stocked up!
Tonight for dinner, I cooked up the shrimp, and tossed it with some pasta and some pesto that I made from our garden basil last summer. YUM! Then I put the rest of the shrimp in the fridge for quick snacking or lunch this week. Low in fat, high in protein, it’s a great healthy pick-me-up!
With the chicken, we prepared two dinners for this week already!
- Judd got out five frozen chicken breasts, and put them in two ziplock bags with marinade. We used Ken’s Salad Dressing: Greek, and Balsamic Vinaigrette.
- Then we put them in the fridge to thaw as they soak up the marinade. Throw ’em on the grill and you have dinner!
- For the Greek Marinade, top the grilled chicken with a mixture of tomatoes, feta cheese, and olives, coated in a little bit of the Greek Dressing.
