Friday’s Frugal Feast: Chicken and Dumplings

Warning: This recipe will not be appearing in “30 Minute Meals.” This Chicken and Dumplings is definitely food of love. It takes a total of about 90 minutes to cook. However, that also has some boiling time built in, so you can work in other tasks.

It’s not fast, but it is cheap! I used some leg quarters that I got on sale at Harris Teeter for $.29 per pound! My father-in-law shared this recipe with me, since it was one of my husband’s favorite meals growing up.

Chicken and Dumplings (about $.30 per serving if you get the chicken on sale)

  • 1 whole fryer chicken, or a whole cut-up chicken, with bones! (about 3-5 pounds)
  • 4 small cans of refrigerated biscuit dough
  • Water
  • 3/4 cup milk
  • Salt and Pepper
1. Fill a large soup pot with water, and bring it to a boil.

2. Add your whole chicken (giblets removed) or chicken pieces to the boiling water. Bring back to a boil, and cook for about 30 minutes, or until chicken is opaque.

3. While the chicken is cooking, roll out the biscuit dough very thin. Cut it into thin strips with a pizza cutter. These will be your dumplings.

4. When the chicken is done boiling, remove it from the pot, and let it cool in a collander or bowl. DON’T DUMP THE WATER!

5. Make sure the water is still at a rolling boil. Drop the biscuit strips into the boiling water.You may have to stir a little bit to make room for more strips.

6. Let the dumplings boil for about 15 minutes. They will look a little like worms, don’t worry, this is normal! They will be firmer than this when they are done. **While the dumplings are cooking, separate the chicken from the bone.

7. Add the chicken meat back to the pot, and let it simmer for about 10 more minutes, adding lots of salt and pepper. My FIL told me, “Use a lot of pepper. You can never add too much pepper.” And he was right.

8. Add the milk, and let it thicken for about 5 minutes. Remove from the heat and serve.

Here is my finished product from Wednesday! Looks yummy, huh? Judd’s dad used to always serve these Chicken and Dumplings with homemade cole slaw.
