Make-Ahead Meal Plan: Meatball Sandwiches and More

It’s true that all moms are working moms. Whether you work outside the home or in the home, juggling weekday meals with work, school, and evening activities is always a challenge. Last week I shared my meal plan, and several people said it helped them with ideas for their own families.

Tonight, I pre-made my meals again. This time, I only had about an hour with which to do it, so there are lots of short cuts this week. Let me know what you think of his week’s plan.

Make Ahead Meal Plan

Monday: Meatball Sandwiches

This is so easy it’s embarrasing. You need a bag of frozen meatballs (or freshly made, if you have time), a jar of sauce, some small sub rolls or dinner rolls, and mozzarella cheese.  Place the meatballs into a container with a jar of your favorite sauce. Put it in the refrigerator. When you’re ready to eat, heat the meatballs in the microwave or oven. Put them in the rolls, top with mozzarella, bake the sandwiches until the cheese is melted.


Tuesday: Soft Tacos or Taco Salad

The only thing to make ahead here is the taco meat. Then put it in a ziploc bag in the refrigerator. We’ll get out the tortillas (or tortilla chips), cheese, lettuce and home-canned salsa and chow down Tuesday night.


Blackeyed Peas

Wednesday: Blackeyed Peas with Rice and Broccoli

I put the blackeyed peas in a large bowl filled with water to soak. Tomorrow night I’ll rinse them and put them in the fridge. Wednesday morning, they go in the crockpot with a ham hock, and we;ll serve them with my husband’s famous chow-chow. (Yes, that’s a real thing)


Thursday: Earthfare Kids Eat Free!

After dance classes, we go straight to Earthfare. Kids eat free with a $5.00 adult purchase. Yes, we go every week. Don’t judge.

Marinated Chicken

 Friday: Grilled Marinated Chicken

The absolute best chicken marinade in the history of the world is Italian Dressing and Soy Sauce. Very simple. I didn’t have any dressing, so I just mixed up balsamic vinegar, olive oil and soy sauce. I put the chicken in the bag still frozen so it would thaw over the next few days. We’ll grill it on Friday.

  1. I really need to get back into doing meal plans and I have to put meatball sandwiches on my list. My kids love them and go crazy when I make them. I don’t know why I don’t make them more often.

  2. I have been so excited because I had a meal plan this week! I’ve always said I was going to do one, then never got around to it. It seems like I just haven’t had time to cook with all the kids’ after-school activities. I’ve been making time this week (and husband has been helping too) and it’s been great. We always eat dinner together, but it’s not always home cooked (I’m embarrassed to say the Taco Bueno crew knows my name). This week’s plan has been awesome. Looking forward to trying out some of your recipes too. 🙂

    Why would someone judge you about Earthfare?! We love that place. Unfortunately, it’s all the way on the other side of town for us. I keep forgetting they do free kids’ meals on Thursday. Thanks for reminding me!
